I want to plant a Hydrangea in a large pot does it need a "special" compost ?

not really but they need as big a pot as possible as they do need a lot of water.

Agree with SBG, ideally better planted in the ground where you will have a lot less watering to do.

Rainwater is better unless, like us, you have very soft tap water. That said the shrub is going to have to be watered so if you don't have a rain butt - tap water it is!
