While the stalks are thick, you can pick a little longer. When they start to become skinny, stop picking. If it is a relatively new plant, err on the side of caution.

The reason I'd stop picking is for the health of the plant rather than any health issues so it depends how much you have really. I try not to take more than one stem from each little centre. But if a frost is forecast you might as well take the lot or it will all be dead by morning. Good for jam with lemon and ginger at that stage.

Some folk say don 't pick after midsummer but I go on using it while its still firm and good and I'm still around after many years... Just go on what condition the stalks are in.
