Can you grow an aloha lily from the top of the flower stalk, once it has gone to seed?

If you mean would a new plant grow if you planted a piece of the flower stalk, no afraid it wouldn't.

They aren't always going to be like the parent. I had some that were green, others, red-ish. But they are easy from seed. Collect and store them in the refrigerator, and sow in spring. They will flower in the second or third year.

If you mean can you collect the ripe seed and grow more Eucomis from those, yes you can, but whether they come true to the parent or not I don't know. Usual propagation method is by division of the plant.
