Acer ?.

I have loaded 2Pictures of same Acer tree one from last autumn and one from last week.
I trim this back every year as i do not want it to grow any taller but as you will see from last weeks pic it as grown very big this year at least 30 inches on the hight.
Can anyone advise me how much i could cut off the top without damaging it?.
Also it is still sprouting new growth even as i write this!!!.
