Pomegranate salad

What is the recipe? Looks good, I wonder, if it is also so tasty.

Mixed salad leaves of your choice
Dressing
110ml fresh or bottled pomegranate juice
110ml Rapeseed oil or sunflower oil
1 1/2 tablespoons honey
50ml red-wine vinegar
Salt and pepper
Pomegranate seeds, for garnish
chopped chives, for garnish (optional)
Whisk the Pomegranate juice, honey, vinegar, salt and pepper together and leave it to stand for a few mins.
Then Whisk in the oil..Check the seasoning and adjust to your own taste.
* You can use Olive oil but I find it too heavy in some dressings.

And you serve it to the meat or you eat it with bread? It sounds very "stomach empty" to me:)

I had it with Tiger Prawns...Fetta would be good or add Pine nuts or Almonds

Pim, I made that salad, but did not use neither pomegranate juice (instead of it I sprinkled the salad with one spoon of lemon juice) nor pepper. It was delicious....Good recipe. I recommend it to others :)
