Yeah Klahanie, I picked the fish myself. This was made on Good Friday as it is a traditional dish served with salad on the day. It's made 2/3 days before Good Friday.

What kind of fish do you pickle ? I love pickled herrings but that is only fish I know people pickle.

I normally use white salmon which is a firm but not oily fish.

Likewise Michaella, I enjoy this pickle with a lovely green salad and a fresh baguette. I often prepare this in the summer as I do not enjoy the kitchen during the summer months.
