I made this cake today.

It is a roll, made from whites and sugar (sort of Pavlova cake) and filled inside with thick vanilla cream. It is extremely delicious. I am very proud, that the roll didn t crack all around when I turned it upside down.

Thank you, Amy. Bathgate@it is very light desert, I call it "heaven in mouth" :-) There is no flour in it, just egg white, sugar, vanilla sugar, vanilla beans and sweet cream.

Boxing day is tommorrow? I am always confused about this particular day. How do you do Pavlova? With kiwi or strawberries?

I choose the fruit according to my preference at the time! I often use forest fruits, or just strawberries.
(In fact, this year, when it came to it, I didn't make a Pavlova at all and just presented a fruit salad, much to my sister's disappointment!)
Boxing Day is December 26th, named after the practice of presenting the servants with their Christmas boxes (gifts) the day after Christmas.
PS I have no servants...

For us the Christmas is on 24th December. Time for serving to others, even to animals, if there are any. On 26th it is officially a second day of Christmas holiday, but in fact, all charm is already over at that time.
