You're so right... thyme and a tiny bit of rosemary...mmmmm. I tried many times to grow it in a pot for my kitchen without success. I planted a large package of wooly thyme in the front dry garden and was rewarded with four very healthy happy clumps... ran over one with the lawn mower and it went crazy...spreading into a huge clump. Now I have thyme and oregano happily growing near each other. This pic is of the clump in the veggie patch, have thyme, oregano, dill, and parsley and twelve tomato plants that I didn't plant, and six Romas that I did plant. I started so late I was expecting nothing..but with all the heat the veggie patch is perking..now if we could just get enough moisture!

Thyme is a must for me. The bees adore it, its evergreen, and its one of very few herbs that will release its herby aroma in scottish temps. Its also fantastic with chicken!
