yep, I knew there had to be an upside.

butternut squash is one of our daughter's favourite soups, I find it too sweet but pleasant enough. especially on a cold winter's day.

Eileen: I'm making butternut squash soup today with squash I grew last summer. You can always alter the recipe to your liking. You can leave out the apple or honey. It's really nice if you add roasted red peppers and garlic as they will caramelize in the oven and season with whatever herbs you like.

she does it with caramelised red peppers and onions but doesn't add any fruit or honey. Her and her dad love it, still a bit sweet for me though.
