This is used a lot in bouquets and like you say Marguerite is soft. We get that horrible spiked version you mention growing amongst the rocks in fields and it's quite an art hunting for the cleverly hidden aspargus tips - they're so good for risottos and omelettes. I used to go with a 92 year old lady (no glasses -honest) who could spot them a mile off - I often couldn't see them when they were right under my nose !!!
