thanks guys-although looking a little rough-they were delicious! especially the icing, which is my favorite part!

lilac/purple is my fave colour.... what is this icing made from ... it's really quirky and looks great

sal, it's called mock cream icing.
mix 1/2 cup soft butter with 1 cup icing sugar
add 3 tbsp cold water, one at a time (while blending)
then add 3 tbsp boiling water the same way.
when fluffy add 1 tsp vanilla.
it's delicious
I used the little icing squirty thing to put the icing on the cupcakes, it's very easy because the icing is so soft!
