I love this, how long does it flower? Can you eat the tubers?

Drc - it flowers for about three to four weeks. I think the native Americans used to eat the tubers but I'm not 100% certain

This grows from a small tuber and reaches six feet or more in a season. I've had it for four years now and it's growing more stems each year
