Is it alright to eat leeks after they have gone to seed?

You'll just have to cut out the tough flower stem in the middle. If you slice them lengthwise instead of across its easy to lift it out.

Or if you are using in a casserole no need to remove the woody centre as it will be well cooked by the time you eat.
