Agree with Ann above. I also thin out the foliage as that helps the fruits ripen as they are not sheltered by the leaves. It also stops fungal growth by hard cutting back and letting the new leaves grow.

I usually root the new baby plants growing at the end of suckers in late summer, and then round about October, move them all to a new bed to establish themselves properly before winter. That's it - they all seem to survive with no problem, whatever the weather.

Previous question
I have never done anything special to my strawberry plants over the winter and they have always survived very well. I thinned them out in September and replanted some of the babies, giving many away as well.
