How big do you want it, and how big is it now? The Callistemon can take a very hard prune and will grow back bigger and stronger than before, they are pretty hard to commit 'Horticide' on!!
Take the branches you want to cut back down to just above a leaf node. That is where the new growth will form. Use the off cuts for cuttings in some sandy, gravelly topsoil.
