Is there anyway I can bind the stem of one of my Daphnes that has been spilt by the weight of the snow?

It's worth trying splints (small sticks) and gaffer tape tightly bound round the whole thing. Do you remember when I had a split clematis stem? We did something similar on that on a smaller scale.
