Can I plant a blackberry or raspberry stem in a large pot to traing along the fence or do the roots need more space to grow?

The roots really need more space to grow... a pot is going to constrict them and cause problems for the canes which tend to grow from a new area of the crown each year. Having the cane of summer fruiting raspberries between two wire which you can anchor them to works better than a fence as the growing canes change position. Autumn fruiting rasps. do not have to be held up but it is often easier to do so. Blackberries should be treated like summer fruiting raspberries. Remember to cut the new canes back to about 5 foot and remove the fruiting canes once you've harvested the berries.
