my cordyline died off with the frost 3 years ago i cut it down to soil level now 2 off shoots have grown they are about 3 foot high how do i split them as i cant dig the whole plant up as i planted it 2 feet deep years ago

These shoots are new growth off the old roots - if you want to split them, you'd need to make sure each piece had some good roots attached to it, and this may not be possible. Left in situ, any shoots which arise will continue to grow, and will eventually form stems, at which point you may decide to remove one or two for aesthetic purposes, or you might decide to leave them all in place.
