strawberry question why do professional gardeners always say cut off the old leaves and tidy them up where normally leaves are left to die back so the energy can go back for next years strength

As per Bulbaholic and it is to allow light to the fruit (the older leaves tend to be larger and therfore shadow fruit), it also keep the plants productive for years as cutting all the leaves off keeps them juvenile.

They don't cut off the leaves immediatley but do so before they have died off fully. This is to let air get round the crowns of the low growing plants to prevent neck rot and to remove any hiding plave for slugs and other creepy-crawlies
