I have an outdoor grapevine, with lots of bunches of unripened grapes. Do I cut them off and try to mature them indoors (like tomatoes), or will they eventually mature?

No, they will never mature off the vine only on it. Grapes usually become ripe at the end of September/beginning of October, so I suggest you leave them on the vine for a while. I have a black grape growing in my greenhouse and they are only just turning from white to red.
