I have just made 25 liters of Elderberry port from last years elderberries that I had in my freezer. Using Elderberries, raisins and sugar.
I have been making this for about 20 years and I believe I've perfected it. It produces a very nice port as good as the shop bought variety for next to nothing.

Make jelly as you would with blackberries, only its a lot more fiddly as you have to strip off the berries carefully as the stems and leaves are poisonous. Or sorbet, or cordial for coughs and colds in the winter.

Assuming you mean the plant then use the flowers to make elderflower champagne and the berries to make wine.
If you mean sambuca the Italian liqueur then set fire to it and drink it.
