I am trying to move a 15 year old Acer Palmatum Var Dissectum Garnet we have hired a digger but it is still proving difficult there are some large roots growing under the pond will it die if we cut them

No but you will have to keep it well watered and perhaps support/stake it to limit wind rock. the thick roots are the anchorage parts. water is taken up by the thinnest roots which of course will be damaged in the diggging up. so lots of water sevral cans at a time. unless we have lots of heavy prolonged rain and I hope we dont!

Personally I think you have little chance of moving a 15 year old Acer Palmatum and I certainly would not attempt it. SBG has given you the best advice!
