I have just cut down an eight foot leylandi hedge. I want to grow climbers up the remaining tree stumps. Should I put them in pots or will they be ok in the existing soil? It seems a bit dry

I agree, if you don't add loads of that soil improver the old roots will make a very dry 'mat' around your climbers and they'll die of dehydration aswell as starving.
I would also dig the climbers hole about 2' away from the stump and then plant it at an angle so it climbs towards the stump. (train it with canes or a small trellis).

either way you will have to water them so I'd put them in the ground. But I would also dig in plenty of compost/humus to improve the soil.
