Have you inspected the tree closely for signs of scale insect or other infestation? Also check the trunk for signs of damage or infection. Other than that, hollies do lose leaves on a regular basis, but as long as there's new growth, this is quite normal. If the tree is continuing to grow and putting out new leaves, perhaps you could have it pruned back in order to induce bushier growth.
