Fresh flowers dont seem to be at all fragrant from markets and even florists - why dont they have a floral aroma as I remember they used to??

depends on what you get. I have some lilies in a vase at the moment and the perfume is overpowering.
Many newer varieties have been selected for their flower form rather than their scent. Roses are a good case in point. lovely shapes but few with scent.
also as we age our sense of smell can also diminish :o(
