If I buy some raspberry canes this month, will they fruit this year or will I have to wait two years for them to fruit?

You should really have bought them in October/November for choice. If you can find any now, the only ones that will fruit (maybe) this year are the ones that flower on new cane growth from the ground that same year such as autumn fruiting Autumn Bliss or Allgold.
You may get little flowering side shoots on the canes of the summer types but maybe a bit much to ask of them really.
