My bay tree is looking very sad after the long winter, I am worried that it is on its way out, the leaves are drying and falling off. What can I do to save it?

Ok, if you haven't repotted it for the last year or so, turn it out of the pot and check to see if its rootbound - if so, repot into a bigger container with fresh compost and water thoroughly. Feed with something like Miracle Gro general purpose, or a handful of growmore mixed into the new compost. Trim back dead growth to live wood.
