If you are talking about peace lilies, the white spathes gradually turn green as the flower ages. When they are a little too green for your taste, cut the whole flower off, spathe and all, just above the leaf it grew out of. With good care--water, light, and fertilizer--you will get more lilies, in a few weeks.
