how often do you pick the sticks of rhubarb?
i often found if you dont pick the sticks on a regular basis (like when the sticks are red) they will eventually go to seed .
so pick them regurlarly and hopefully it eont seed.
if you have a couple of stems which have seeded then pill the sticks up and recycle them or if not try and save the seeds , dry them out and sow the seeds
