I bought an Erusimum today at my local garden centre. It has flowers at the top of a long stem, should the flowers be growing up the stem or are they supposed to just be at the top?

If you mean Erysimium, then yes the flowers are all at the top of the stem, but it will extend and produce quite a lot of flowers. When the spike fades, trim it off to just below the last dead flower and the plant will shoot and bush out. If it is 'Bowles Mauve' then it will flower for months in this way.
