how do I stop my surfinias from just flowering at the end of the plants? Should I pinch the tips out now (early May) to encourage bushing?

No. Surfinia petunias have a particular growth habit - they trail, with new flowering growths towards the ends of the stems. They usually have several stems that flower, but the point of them is that they trail, so best planted in a hanging basket or wall trough. If you don't want that kind of plant, then buy something else with a different growth habit, such as Cascade pelargonium Geraniums, or ordinary Geraniums, or Busy Lizzy, or Nemesia or Savlia or Begonia or any of the wide range of summer bedding plants available.
