Just bought 2 olive topiary trees to put in pots on the patio
do I use a multi-purpose compost because the pots they are in just seems to be soil?

Trees and shrubs grow better in pots if you use John Innes no3. This is a soil based compost and doesn't decompose like the peaty/coir types. The drainage is also better for olives. It is heavy, as you will discover when you buy it! So place the pot in position before you fill it with compost or it will be difficult to move.
