Buy a fresh rhizome from the supermarket and plant it. It will grow perfectly well.

I'd just add you should look for a rhizome that has a good bud developing already on it, which makes it easier, and that some bottom heat will get it into growth more quickly. During a good summer you can get enough growth to harvest the root in the autumn. I've never managed to get one to flower, but some people certainly have.
