it is said that beetroot seeds should only be sown into the ground as they don,t transplant, but i have planted b seeds in trays and then transplanted them into the open ground no problem. i suggest to you re your question, give them a good soaking an try transplanting in the late evening and water well for a day or two, re answer above the leaves are lovely boiled then fried with some butter.
