My pak choi plants have bolted and are now flowering. Is it safe to eat the leaves that have also grown on the stems?

its the heat that bolts them get your wok out and eat the whole thing flowers and all ive been growing chinese veg for years a little garlic and chilli and soy sauce in the wok for no more than 1 min
