You can tip prune them now if you like. The main pruning is done, depending on weather, in late February where I am - you haven't said where you live but in the north it may be best to leave until early March or even later. Cut back all new growth by a third and all laterals to 3 - 5 buds. Remove any weak or crossing branches. You can mulch over the winter with compost, well rotted manure or washed seaweed, and after pruning give a feed of sulphate of potash which encourages flowering and hence fruit. I would put this on in Feb regardless of whether you delay pruning.
