You can do that or put them in a glycerine and water mixture which preserves the leaves as well. (Don't ask me the proportions I just guessed but it worked)

do you mean the flower heads? In the past I have just cut dead flower heads off and hung them upside down to dry in an airing cupboard. They don't tend to keep much of their colour though.
