In early winter pull one to see how they are doing, especially if you have two growing quite close together as this will thin them out and leave space for the remaining one to grow. My husband always says they taste better after they have had a frost on them! They make lovely wine too!!

Parsnips definitely taste better once they have been frosted - turns the starches to sugars. We thin out September /October time.
