Can you freeze broad beans?

If you have too many try soup - cook with a previously fried onion or leek and two big stalks of mint. Liquidise and dilute to desired consistency with milk. Do not omit the mint! Its surprisingly delicious. And of course you can freeze that as well.

We don't even blanch them. By blanching the beans become wet and stick together when frozen. We just put them all in a large, lidded box in the freezer and take out a couple of handfulls for use as required. We do the same for peas.

That said we do use them within a few months of freezing. If you expect them to be in the freezer for longer they do need blanching and drying out on kitchen roll or similar to kill a particular enzyme in them.

I don't care for milk either but you can't tell its there in the soup. Or use rice milk (I have that on my cereal)

Sounds yakky but it isn't - I was surprised. And I do put a dollop of plain yogurt on top and some fruit as well...
