I have a very large hydraenge that has been the center of my garden for years, i cut down every year however
even though it has grown as big as usual has struggled
to flower.

Take a look at the RHS guide on pruning - in spring, cut some stems hard back to encourage new growth but leave/lightly prune the rest.

Hydrangeas flower on last years wood, so if you cut it down you are cutting off next years flowers
