Pittosporum [Golden Sheen] in pot. The shrub is approx. 8 feet tall and very sparse - lots of open space between the branches. How can I make it fill out?

Personally I'd prune about 1/3 of the stems down by half this year then another 1/3 the next and the final 1/3 the following year. This way it will resprout new growth from the pruned stems and over a 3 yr cycle it will bush out. don't forget to feed it well especially as it is in a pot.
