I planted a Cherry Tree (Prunus 'Beni Yutaka') last August. It currently stands at about 7-8 ft. Should I cut off the side shoots lower down the tree trunk or, should I just let them be for the time being. If I do cut off the side shoots, where do I stop?

Depends really on what shape you want the tree to be. If you want a long trunk with no side branches then cut them off but wait until the tree is dormant.
