I have an area under trees of predominantly cow parsley that I want to convert to meadow grasses..what is the best way to do this please?

I'd start by pulling or digging out all the cow parsley before it seeds, and see what's left. If its mainly grass you could then just keep it strimmed but not too short.
If the grass turns out to be couch grass it might be best to get rid of it and start again.
