Is it necessary to remove any of the leaves once the courgette plant gets established?

No, I wouldn't remove any of the leaves unless they were diseased or bug infested. Photosynthesis takes place in the leaves - the plant converts light energy from the sun into chemical energy then transfers it into the fruit which we eat. Also, the leaves protect the fruit from sun scald.
