Mine decided to sprout on my shelf, once! I would plant the tuber sprout side up, about 2 cm deep, in a 25 cm pot of good potting mix, and keep it in a sunny window. If you live on the south coast, you might also be able to plant it in the garden, though it is getting late, if you get any frost at all in the winter. Once the sprouts show above ground, let the top 1/2 cm of soil dry out between watering, and feed it regularly with a low phosphate food, such as the new formula Miracle-Gro. It should be ready to harvest spring of 2011 if grown indoors, or fall of 2011 if grown outdoors.
