I have a meconopsis betonicifolia that has finished flowering can anyone tell me should I cut the leaves back and how do I look after it over winter as there was loads of blue flowers all the way down the stem thanks in advance.

No don't cut the leaves back they will die back of their own accord as meconopsis are fully herbaceous. Meconopsis betonicifolia is a short lived, often monocarpic perennial so look out for the offshoots next spring.
