Can you keep pansies from getting leggy by trimming the stems?

yes you can I do it regularly as well as general deadheading and feeding.

First, feed regularly. That will encourage new stems to sprout from the base of the plant. Once you have a good crop of new stems, prune off the old, leggy ones, in stages.
