Can anyone give me ideas on what to plant under and around my new prunus Royal burgundy tree

Agree, nothing is best within 2 to 3 feet of the trunk - cherries produce a lot of surface roots over time, and its impossible not to disturb the roots if you need to change or replace any planting you've got around them. They like fertile, previously enriched soil, and don't appreciate other plants in close proximity taking away nutrients and water.

Nothing in the near vicinity, it needs open soil to grow in not crowded with other plants! A metre out you could grow nothing that is going to look good against the flower/foliage, though it is still better set to be seen on its own i.e. in grass which is kept a metre away from the stem.
