can i cut back my sambucca now as it has grown very tall and spindly

There's nothing to gain cutting it back now, other than making immediate space. Surely you would be cutting off some of the fruiting branches?
Far better to leave it until early spring or late autumn and then give it a good pruning before new growth starts.
