I have a Cordyline Australis Red Sensation plant and the leaves are starting to dry up and fall off. The stem of plant is getting longer due to this. I have had the plant for about 7 months now. I water it once a week. Is this normal.

It's normal for some lower leaf loss to occur as the trunk or main stem gets taller and more upper leaves are produced, yes. If the leaf loss is excessive and it's not just the bottom leaves, that might indicate a problem.
